Ratatouille

If your garden is overflowing with produce, this is a tasty way to use it up! Ratatouille is a zesty tomato dish that is sure to please everyone.

From Allie's recipe box:

Directions
2 onions (chopped)
4 cloves Garlic (minced)
1 bay leaf
Saute in olive oil for 5 minutes

1 medium eggplant (chopped)
1.5T fresh basil (chopped) or 2t dried
1T fresh rosemary (chopped) or 1t dried
1.5t salt
1t fresh marjoram (chopped) or .5t dried 

Add, cover and cook for 15-20 minutes over medium heat

2 zucchini (chopped)
2 sweet bell peppers, any colour (cut in strips)
2C tomatoes (chopped)

Add and simmer until pepper and squash are tender, approx. 10 minutes. 

Serve over pasta, rice, quinoa or polenta

Can top with fresh parsley, olives, parmesan cheese (I sometimes use Feta)

This recipe is vegan until you add the cheese, so it is a great option if you are cooking for someone who prefers that. 

You can also add shredded chicken or ground beef if you want to make a more protein packed meal.
